This tasty and healthy side dish is quick and easy to make, especially if you can find in a supermarket cauliflower “mini flakes” (some also have carrot and broccoli bits in them too, the carrots certainly compliment the desired color for this dish). Alternately you can use a cheese grater or a food processor to chop the cauliflower and other vegetables down to the size of a small grain. But if you don’t have to do all that, the dish comes in at under fifteen minutes of prep time and cooking.
